Biryani is a South Asian spicy rice dish. It is popular throughout the subcontinent and surrounding areas.
It is cooked for special occasions, but not restricted to events only.
This is one of those dishes which make you gourmand and craving for more.
Ingredients
Beef 1/2 kg
Rice 1/2 kg
Oil 1 cup
Tomatoes chopped 3-4
Yogurt beaten
Onion finely shredded 3-4 nos.
Ginger cursed 2 inch long piece
Garlic finely crushed one medium pod
Green Chilies chopped 4-5 nos.
Spices: Salt to taste, chili to taste, plum whole 4-6, cloves 8-10 pieces, cinnamon sticks 1 inch long 4 pieces, black pepper whole 10-15 nos cardamom green and brown 4-6 each, taj patta 3, haldi 1 teaspoon, food color (sunset yellow) 1 pinch or two, kewra essence a few drops, coriander powder 1 teaspoon, cumin whole 1 teaspoon,
Method
Thoroughly wash and soak the rice in water for 1/2 hour.
Take 5 glass of water in a pan, add 3 teaspoon of salt to it then add rice and boil on high flame till near to cook
(Do not fully cook).
Drain water and keep aside the rice.
In a separate pan, fry onion in oil till golden brown.
Now add ginger, garlic, tomatoes, meat, yogurt, green chilies and spices and fry for 5-10 minutes.
Now add 2 glass of water and cook on medium flame till meat is tender and little gravy remains.
Now in a separate pan, arrange alternate layers of cooked meat and boiled rice and then simmer them.
Mix together rice and meat before serving.
Serve with raita and salad.
